Salmon bonbon with avocado mousse

For a starter, a Salmon Bonbon filled with Avocado Mousse. It is important to choose wild salmon, because it contains more omega-3.

INGREDIENTS for 4 people

  • 200 grams smoked wild salmon

  • 2 avocados

  • Juice of 1 lemon

  • 2 tablespoons of greek yogurt

  • Fresh dill

  • Lettuce for garnish

  • Cayenne pepper

  • Sea salt

  • Spring onions, finely chopped

  • Cling film


Halve the avocados and scoop out the flesh. Put the avocado, greek yogurt, lemon juice and spring onions in the food processor and blend to a smooth 'mousse'. Season with salt and pepper. Put the cling film into cups and arrange the slices of salmon around the sides. Make sure the salmon is hanging a little over the edges. Place the avocado mousse into the cups and fold the salmon on top. Cover the cups with cling film and place in the refrigerator for one hour.

Turn onto a nice plate and garnish the bonbons with a sprig of dill and some lettuce.
