With tacos you probably think of crunchy corn tacos with minced meat and beans, but did you know that tacos are originally soft in Mexico? There are also many more variations on the filling than just seasoned minced meat. Here we have a tasty recipe with spicy roasted cauliflower.
INGREDIENTS
1 cauliflower
3 tablespoons olive oil
1 clove of garlic
1 teaspoon of cumin
1 teaspoon chilli powder
2 teaspoons curry powder
Cherry tomatoes
Red cabbage
Avocado
Radishes
6 soft tacos
Hand of coriander
200 ml coconut yogurt
Lime
Pepper and salt
PREPARATION
Preheat the oven to 200 degrees.
Cut the cauliflower into florets and marinate them by mixing all the herbs (garlic, cumin, chili powder and curry powder) with the oil in a bowl. Place the florets in the spice mixture and then in a baking dish covered with baking paper. Bake the cauliflower florets for about 30 minutes.
Meanwhile, cut the tomatoes into segments, the red cabbage into strips, the avocado and radishes into slices. Mix the coconut yogurt with the juice of the lime, pepper and salt.
Remove the cauliflower from the oven and heat the tacos in the still hot oven. Top them with the cauliflower florets and the rest of the vegetables, sprinkle the yogurt dressing on top and garnish with coriander.
