Ramen is a Japanese dish that mainly consists of noodles served in broth, flavored with miso and soy sauce and with toppings of your choice. Delicious for lunch or dinner. Replace the white noodles with whole-grain noodles and it's also a healthy and nutritious dish.
Traditionally, ramen is made with broth based on pork bones or chicken, but we opt for a vegetarian version. You can choose to add meat or go for a different broth.
INGREDIENTS
1L vegetable broth
1 clove of garlic
1 red pepper
Piece of ginger of 3 cm
2 tbsp white miso
200 grams of noodles
150 grams of tofu
125 grams of shiitake
1 pak choi
3 spring onions
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp olive oil
2 eggs
PREPARATION
Cut half of the ginger into slices and grate the other half, chop half of the red pepper into pieces and keep the other half whole. Heat the broth in a soup pan and add the ginger slices, the garlic and half a red pepper. Let this boil for 10 minutes. Remove the seasoning and dissolve the miso in the broth.
Bake in another pan in olive oil the chopped red pepper, grated ginger, tofu (diced) shiitake, the white of the spring onions and the pak choy for a few minutes. Scoop and stir constantly. Finally add the soy sauce and sesame oil. Prepare the noodles according to the package and wash down in cold water. Boil the eggs for 6 minutes.
Divide the fried vegetables and the noodles into two bowls and pour the stock over it. Garnish with the remaining green of the spring onions and the egg.
