If you have ever been to Thailand, then you have certainly eaten a plate of pad thai. This is the signature dish of Thailand and it is very tasty. Pad Thai means "fried noodles" and you can eat it with shrimp, chicken or tofu. We choose tofu here, which makes this a vegetarian dish. Feel free to add chicken or shrimp if you like. You can prepare this one-pan dish in a wok over high heat and is therefore ready quickly!
300 grams of rice noodles
60 ml fish sauce
70 ml of honey
3 tbsp tamarind paste
2 tbsp rice vinegar
2 tbsp corn starch
1 red pepper
3 spring onions
1 clove of garlic
100 grams of bean sprouts
250 gr tofu
100 gr peanuts
Prepare the noodles as indicated on the package. Drain the noodles and sprinkle with a little oil so that they do not stick together. Squeeze the liquid from the tofu and place on a paper towel so that it can drain. This is crucial if you want to bake the tofu crispy.
In a saucepan, mix the fish sauce, honey, tamarind paste and rice vinegar. Bring to a boil and remove from the heat.
Cut the garlic, red pepper (without seeds) and spring onions into small pieces and the tofu into cubes of about one centimeter. Marinate the tofu in a little soy sauce and then cover in a layer of corn starch. Chop the peanuts or crush in a blender.
Place a wok pan on high heat with wok oil and add the garlic, red pepper and two thirds of the spring onions. Beat an egg, add to the wok and stir with a spatula. Then add the tofu and fry for a few minutes. Finally, add the noodles, sauce and bean sprouts and fry for two more minutes while stirring.
Serve the dish with peanuts, coriander, the remaining spring onions and half a lime. Enjoy!
