Mediterranean trout from Andorra
Thanks to the many rivers and mountain lakes in Andorra, fishing is a popular sport in Andorra. Fish your own meal together and prepare it on a barbecue or at home in the pan. In the Netherlands there are many trout ponds where you can fish for this delicious fish yourself, you will not get it fresher than this. But you can also get trout at the fish market or in the supermarket. It is a light and simple dish that is perfect for lunch or dinner. In this recipe for Mediterranean trout you can see the Spanish influences in the Serrano ham.
Ingredients:
- Four fresh rainbow trout cleaned up
- Two lemons cut into slices of about 0.5 cm
- Eight sprigs of fresh flat-leaf parsley
- Four sprigs of fresh sage
- Four sprigs of fresh oregano
- One pack of serrano ham, you can replace it with parma, iberico or other dried ham
- Pepper to taste
- Sea salt to taste
- Olive oil
Preparation:
Pat the trout dry on the inside with kitchen paper and sprinkle the inside with sea salt and pepper. Stuff each trout with one sprig of fresh parsley, sage and oregano and place two lemon slices in each trout. Rub the outside of the fish with olive oil with a paper towel. Heat the grill/pan to a medium heat and fry the trout briefly on both sides for 8 to 10 minutes. Garnish the fish with the remaining parsley and lemon wedges. Squeeze some lemon over the fish and season with extra salt and pepper if needed.
