Ingredients
500 grams sweet potato
200 grams lentils
400 gram fresh red beets
350 grams broccoli
Two white medium onions
A cup of hummus
200 grams of kale
Two handfuls of pumpkin seeds
One tsp turmeric
Pinch of black pepper
Two tsp Ras el Hanout herbs
One tsp white wine vinegar
Oil for frying
preparation
Preheat the oven to 180 degrees.
Peel the beets and cut them into small cubes. Boil them for 5 to 10 minutes until they are done. Leave the beets in the pan with the lid on to keep them warm.
Cut the sweet potatoes into cubes. Place them on a baking tray lined with parchment paper or in an oven dish. Spread some oil, Ras el Hanout herbs and salt and pepper over it and put them in the oven for 15-20 minutes. Toss once halfway through. Turn off the oven when they're done and leave them in the oven to keep them warm until you're ready to serve them.
Finely chop the onions and fry them with the turmeric and black pepper on a low heat. After a few minutes, add the white wine vinegar.
Fry the kale in a little olive oil until it has shrunk slightly.
Cut the beets into small pieces.
Drain the lentils. You can eat the lentils cold, but you can also warm them briefly in their own liquid if you prefer.
For a nice bite you can roast pumpkin seeds until they start to pop slightly.
Put the hummus in the center and divide the onion and pumpkin seeds over the entire dish.
