For 2 people, you will need:
– 75 grams lamb’s lettuce
– 100 grams goat’s cheese
– 100 grams raspberries
– 25 grams unsalted pecan nuts
– 1 scallion/spring onion
– 1 tbsp olive oil
– 1 tbsp balsamic vinegar
– 1 tbsp honey
Directions:
To make the dressing, mix the olive oil, balsamic vinegar and honey in a bowl.
Slice the scallion into rings and finely chop the pecans.
Divide the lamb’s lettuce, raspberries, scallion, goat’s cheese and pecans between two plates.
Drizzle some dressing over the salad and it’s ready to eat!
