Kitchari is an authentic Indian dish that is meant to cleanse your body. It consists of half rice and the other half mung beans. Kitchari is a wonderfully warm, nutritious, grounding yet easily digestible dish. This is due to the herbs and because you soak the mung beans and basmati rice in water a few hours in advance. Ingredients (for 4 persons)
200 grams of mung beans
200 grams of basmati rice
1 tablespoon of ghee or coconut oil
1 tablespoon of cumin seeds
1 tablespoon of coriander seeds
1/2 tablespoon of cumin powder
2 garlic cloves
piece of ginger, about 2cm
1 teaspoon of turmeric
1 organic vegetable stock cube
1 bunch of fresh coriander
Salt and black pepper to taste
optional: root vegetables such as carrot, celeriac, sweet potato or parsnip
Preparation
Soak the mung beans in water at least four hours beforehand or overnight. Rinse the basmati rice and also soak it in water for a few hours.
Heat the coconut oil or ghee in a pan and add the cumin seeds and coriander seeds. Then add the garlic, ginger (finely chopped) and possibly the root vegetables. Fry on medium to low heat for a few minutes. Finally add cumin powder and turmeric and fry it for a while.
Rinse the mung beans and rice and add this to the pan with the vegetable stock. Add water until just submerged and cook for about 20 to 30 minutes. Add extra water to get the desired consistency. Season with salt and pepper and additional herbs if desired. Serve with fresh cilantro!
